Slightly sweetened with a splash of stevia ~ a low-calorie sweetener that is actually good for you. Of course, we still need to maintain a sense of moderation.
1/2 cup (about 2 ounces) dark chocolate 70% or higher, melted
4 ripe avocados, peeled and pitted
4 ounces of coconut milk
4 ounces of unsweetened dark cocoa powder
2 full droppers of stevia
1 teaspoon vanilla extract
1/4 teaspoon salt
7 tablespoons of espresso
Coconut whipped cream, (optional) 4-5 Tablespoons in the mix and the rest for decoration

1. Melt the chocolate in a double boiler. You could use the microwave but we don’t recommend it.
2. Meanwhile, place your avocados in the food processor and blend until creamy. Add all of the remaining ingredients, including the melted chocolate and blend until it’s all one color and creamy, for about 80 seconds. The dark chocolate is dominant in this mousse, so you might want to add more sweetener of your choice.
3. Place mixture into ice cream bowls or cocktail glasses and decorate with whipped cream and cacao nibs!
It will stay fresh for 24 hours if kept refrigerated.
